A Birthday Dinner Part 2...Manicotti!



Hi Everyone, I finally got around to posting part 2! Hope everyone likes Italian food lol. Here is the link to part # 1.  A Birthday Dinner Part 1

 Our family LOVES Italian foods, like Manicotti, Lasagna, Spaghetti and goulash to name a few :). And we also use different sauces like alfredo, spaghetti, and marinara.

     Okay, for my Mom's birthday she wanted to have Manicotti (for most of their date nights my parents go to Italian restaurants). This was my second time making it so I was still a little unsure of myself :) Here is the recipe I used!

Three Cheese Manicotti

1 (8 oz.) package manicotti pasta (I used lasagna noodles)

16 oz.ricotta cheese (I used two 15 oz. packs.)

6 oz. shredded mozzarella cheese

6 oz. shredded Monterey jack cheese

2 tbsp. sour cream

1/3 c. dried bread crumbs, seasoned (I used the end slice of a fresh loaf, I was short on time and it worked)

1/4 c. chopped fresh parsley

salt and pepper to taste

2 c. spaghetti sauce (I used marinara sauce, and a lot more of it! Lol)







Directions

  1. Oven needs to be preheated to 350 degrees
  2. Bring lightly salted water to a boil, add lasagna noodles and cook for 8 to 10 min. until      al dente, then drain.
  3. combine in a large bowl, ricotta cheese, mozzarella, Monterey jack, add sour cream, bread crumbs, parsley and salt and pepper to taste; mix up well.
  4. spray a 9x13"pan and spread a thin layer of marinara sauce in the bottom.
  5. cut lasagna noodles in half across (you will use noodle for each manicotti)
  6. place some of the filling on  half of the noodle and wrap it up, then wrap the second half around it.
  7. once all of the manicotti's (noodles and filling) are in the pan, place the rest of the sauce on top
  8. cover top with more mozzarella and place in the oven.
  9. bake for 40 minutes and serve.

Wrap the noodle over the filling..
then place the other half over it...
fold.


cover with cheese...

Thorn in the flesh?




 This last week we have been getting ready for spring, so I was cleaning out flower beds and trimming bushes.  The rose bushes really needed a trim so I decided to do that project on Saturday.

   While I was trimming them I had a tiny thorn get in my hand, it hurt a little but more than that it was annoying!  After the first 10 minutes I didn't feel it anymore so I didn't do anything about it when I got in the house.


  Fast foreword two days and I notice it again, my thumb was swelling on one side, it was infected.
If I had dealt with it right away it would not have gotten infected.  We treated it and after two days it is doing much better.


 Today I was thinking about how such a little thing when it was left there became a bigger problem, and if we had left it in there it would have gotten bigger and bigger.


  Sin is like that we can think that holding onto anger or lying once in a while or having a bad attitude are just little things, but if they are left in there and not dealt with they just keep getting bigger and bigger until one of two things happen, you either stuff it down so much that you don't feel it anymore or, you can't think about anything else and you are eaten up with guilt.
 

   So What is your thorn in the flesh? anger, lying, bitterness? Whatever it is you need to get it out before the infection spreads!

 SIN needs to be dealt with right away or it will fester and destroy you!

A Birthday Dinner....Part 1 Breadsticks!



    My Moms Birthday was earlier this week and I was able to make a special dinner for her! She chose salad, breadsticks, manicotti, and cheese cake!   This post will be about  the breadsticks.

   This was the second time I have made this recipe for the breadsticks and it was a hit the first time so I made them again!


Pizza Hut Breadsticks

Dough

   1 1/2 c.Warm Water                   1 1/4 Tsp. Salt
  
   1 Tbsp. Instant Yeast                 3 Tbsp. Oil or Butter

   1 Tbsp. Sugar                             4 C. Flour

 Dissolve the yeast, sugar, and salt in the warm water;   Add oil and enough flour to make the dough soft but not sticky.
 
  Let dough rise until it has doubled in size, then roll it out in a large square, cut into strips 1" x 4" (this time I just rolled it out in a 9x13" pan and cut it afterword's, it saved time! ) 





Butter Mixture for the top

3/4 C. Melted Butter                       1 Tbsp. Dried Parsley

3 Tbsp. Parmesan Cheese              1 Tbsp. Italian Seasoning

1 Tbsp. Garlic Powder

  Melt butter, and add parmesan cheese & seasonings. Dip the dough into mixture and twist; (again I just put it in a 9x13" pan so I just spread the mix on top of it)
  Place on a greased cookies sheet. cook at 350 degrees until they are a light brown- don't overbake!

In The Beginning, GOD






                          In the beginning God created the heaven and the earth
                                                                                   
                                                                                       Genesis 1:1



        For a minute lets take the first part of the verse, in the beginning GOD. Just think about that, we are always doubting God, we might not mean to but we are, How many times o you not pray about something because you think God is too busy, or he won't answer soon enough so why even try? Or maybe you think he doesn't care?




 Ok on to the second part of the verse created the heaven and the earth.  He created everything including you and me.




 Why are we so hesitant to let the God of the universe who Loves us help us?  It's so silly to keep holding onto all of this weight and pain when we could get free from it by laying it at our Savior's feet.














He has been here since the beginning and he will always be here, so who is a better person to take your pain and sorrows to?  He made the entire universe, and yet he cares for you!















Remember he already knows everything and He is just waiting for you to trust Him enough to give Him your burdens.

Biscuit Crust Pizza!

Hi everyone! This is post # 30 on my blog!
                   
                       Well today I am doing a post on biscuit crust pizza, this is a meal we really like and we rarely have leftovers :)



                                                           Dough in a mixing bowl

Put whatever amount needed on a greased cookie sheet  
Spread the dough out flat

This one has alfredo

And this one has pizza sauce

Put the cheese on, we normally use mozzarella....  

and cheddar

Put the pepperoni on.



We like to add some frozen onions and peppers
(freezer section at the store:) for extra flavor!


Biscuit Crust Pizza

Crust

          ( I have two different measurements here, the original (bold) and a tripled )

6            Cups flour
12          4  Tsp. B. Powder
3            1  Tsp. Salt
1         1/3  Cup(s) Butter
2         2/3  Cup(s) Milk

Mix flour, B powder, and salt into a bowl. add butter (I melt it) and mix, add milk. Mix together and place on greased cookie sheet (with sides) and flatten out.

Toppings

We had two different toppings this time (But there are many other ones we have tried)

Pizza or Alfredo Sauce

mozzarella and mild cheddar cheese

Frozen onions and peppers

Pepperoni

You could also use hamburger, pineapple, sausage, Chicken, and BBQ Sauce.

Set oven at 450 degrees for 15 to 20 minutes (check every five minutes first time to see how long it needs)


Halfway baked.

All ready to Eat!

Mmmm...........Look at that cheese!
