Moist Oatmeal Cake..........Yum!

This week I tried a new recipe and it is definitely one that we will do again! So here is the recipe!

Moist Oatmeal Cake

1 cup quick oats                                 1 1/2 cups hot water
1 cup white sugar                               1 cup brown sugar
1 stick butter                                      2 eggs
1 1/2 cups flour                                  1 tsp. salt
2 tsp. b. soda                                      2 or 3 tsp. cinnamon
1/2 cup nuts

Mix the oatmeal and hot water together and set aside;  mix the other ingredients together in another bowl, then add the hot oats
     Bake at 350 degree's for 45 minutes.




Moist Oatmeal Cake Icing

6 Tblsp. butter                                  1/2 cup brown sugar
1/2 cup coconut flakes                      1 Tblsp. vanilla

Mix together in a sauce pan and heat for a few minutes.  Let the cake sit for 5 minutes, spread icing on top and put under broiler for a few minutes. check after 2 minutes.

Yum!
It really is moist!
As you can tell......they liked it! :)
